A few things that top my list are fair cut French fries, chocolate peanut butter ice cream, towels hanging outside to dry, the smell of suntan oil and Popsicles. One thing, that brings back summer memories for me are Jello Popsicles. My Mom used to make up batches daily to keep up with the demand of my sister and I! Oh, and all the neighborhood kids! Yesterday, I gave it a shot and made my 1st batch of Jello Popsicles. I tried to find the Popsicle molds yesterday but every store I tried was all out! I think I'm a little late in the season for buying Popsicle molds. Oh well, I opted for the dixie cup method. I only filled my cups up 1/2 way so it would be less work for a 4 year old to keep up with. If you use the dixie cup method you will need to start to freeze the Jello before you put the sticks in the mold. Once it starts to freeze go back and stick your sticks in the middle and then continue freezing. To remove the cups all you have to do is tear the cup off!
Jello Popsicles
3 oz. box of Jello
1 cup boiling water
1 cup cold water
1 T. sugar
bring 1 cup boiling water to boil
add, in the box of Jello and stir until all sugar is dissolved
stir in 1 cup of cold water
pour the finished mixture into Popsicle molds or paper cups
makes about 4-6 Popsicle depending on size
optional you can add chopped up bits of fruit
towels drying on the fence ... signs of a good summer day at the pool!
