Holidays are here!

Holiday Traditions!

I am so excited the holidays are here! I love the holidays from Thanksgiving to Christmas! The hustle and bustle of Christmas shopping to baking to enjoying time with family and friends. Today, is the actual first "real" snow day of the year so I am spending the day inside baking so I can have more time next week to enjoy my family and friends! Today I made Swedish meatballs. A tradition since I was a little kid in our family. We always had Swedish meatballs on Christmas eve along with shrimp cocktail and some pickled herring <---yuck! I will not be making the pickled herring but the shrimp and Swedish meatballs will be on the menu for Christmas Eve. So what are some of your family holiday traditions?

Here is my recipe for Swedish Meatballs - sorry the pictures are lame!

1 beaten egg
2 1/4 cup milk or light cream
3/4 cup soft bread crumbs
1/2 cup finely chopped onion
1/4 cup snipped parsley
1/4 tsp. pepper
1/8 tsp. allspice
1/2# ground beef or ground veal
1/2# ground pork or ground lamb
1 T butter
2 T all purpose flour
2 tsp. instant beef bouillon
1/8 tsp pepper

In mixing bowl combine egg, 1/4 cup of milk, bread crumbs, onion, parsley, 1/4 tsp. pepper, and allspice. Add meat and mix well. Shape into about 30 meatballs. In a large skillet cook meatballs in butter over medium heat for about 10 min or no pink remains. Cook 1/2 of the meatballs at a time. Remove meatballs from skillet and drain meatballs on paper towels. Save about 2T of drippings.

Stir flour, bouillon granules, and 1/8 tsp. pepper into reserved drippings. Add remaining milk - 2 cups. Cook and stir till thickened and bubbly. Cook and stir for an additional minute and then add meatballs back into skillet.
